This recipe is not spicy if you use Rotel with lime juice and cilantro. For a spicier version, I recommend using Original Rotel with diced green chilies. You can also add other spices to kick up the heat. This recipe is versatile and easy to adapt to your taste.
We like things spicy, so I added 1 jalapeño in my 1 cup of chilies. 1 (10-oz.) can original Rotel that is already minced in the can; 1 lb. spicy ground pork sausage, medium-strength hotness (I use Jimmy Dean brand) 2 or more bags Scoops Corn Chips or tortilla chips (make sure you get big bags!) Instructions. I've cooked this recipe in both a Crock-Pot as well as a double boiler. Either way works fine. I am not one for a strong spicy flavor, so the mild rotes works perfectly for me. Rotel can be added to many recipes to add flavor.
